What happens when re-culturing?

A finished yogurt can be reused several times as a starter. However, over multiple generations the culture may change. Spontaneous mutations, contamination, or the selection of faster-growing sub-strains can reduce effectiveness. Dr. William Davis, who developed the method, recommends starting fresh with new capsules after no more than 20 batches. This ensures that the physiological activity of the bacteria is maintained.

Why 20 generations?

Food microbiology studies show that lactic acid bacteria can undergo genetic changes after about 10 to 30 passages.

These changes arise through spontaneous mutations, natural selection, or contamination. They can lead to a loss of certain health-promoting properties.

That’s why we recommend starting fresh with new capsules after 20 batches at the latest, to ensure the bacteria can fully unfold their effects.
